Update on life: I was promoted at work to a merchandising execution leader and transferred down to Cincinnati. A note on Cincy.. not the most uh vegan friendly location. There are a few options which I frequent regularly but a city with a nickname "Porkopolis," (due to the country's chief hog packing center)..doesn't cater to the vegan lifestyle.
I have since mastered some extreme chef skills. I purchased a vitamix and am still learning the amazing things it can do-like make ice cream and pb? I have fallen in love with kale and tempeh and both have become staples at Whole Foods. Which is now conveniently in walking distance to my apartment. Cooking has become such a passion of mine; I look forward to every next meal. When I cook..everything is extremely elaborate! Not elaborate in a time consuming or expensive way, just a ton of healthy, whole ingredients combined to create bliss. I have started cooking more for friends and family. When my steak and burger eating friends approve..more bliss =].
More recently I have played with the thought of opening a vegan cafe. Always having an entrepreneur drive in me, I have tweaked my life goal to owning not just a tea shop but a combination of the two: Vegan cafe/tea shop. This was once a dream for much later in life but so many young entrepreneurs are taking advantage of incubators and the foodie trend. I am inspired. Any investors interested? I can make a mean business plan =].
